walnut salad! And the best part is....(drum roll)...it tastes better
when it is made 24 hours ahead. What a time saver!
I love this recipe because it is so simple and good.
Broccoli Walnut Salad
Serves 2 (Just double the recipe for 4)2 cups fresh broccoli, cut into small pieces
2 tablespoons chopped walnuts
2 tablespoons raisins
2 tablespoons mayonnaise
2 teaspoons lemon juice
2 teaspoons sugar
______________________________
In a small bowl, mix broccoli, walnuts, and raisins.
Combine mayonnaise, lemon juice, and sugar. Mix
into salad. Cover and refrigerate 1 hr. ( STOP! Wait
until the next day! It is too good then!)

Sounds delicious! I will have to trade out walnuts for pecans(just a little bit allergic), but this sounds like the perfect summer salad.
ReplyDeleteIt is a great salad and I make it as well -- but I substitute cashews for he walnuts and use golden raisins. Any way you make it, it is good!

ReplyDeleteI love this also, but use pecans and dried cranberries for the Christmas holidays and then also substitute Splenda for sugar.
ReplyDeleteAdd a few slices of crispy crumbled bacon just before serving for a different taste.
Just made a healthy dish less healthy but sometimes it takes that to get the broccoli down.
