We love BBQ sandwiches at our house! I bet you do, too!
Here is a great recipe we use over and over. I forgot to
take a picture for this blog until after we had eaten it
all so I took this picture off the internet. But this is what
it looks like. Basically, in the morning, I sear a pork loin
roast in olive oil until it looks great and everyone in the
house has asked, "What's cooking?" Then I put it in the
crock pot with all the added ingredients and plug it in
on the side porch where it cooks til about 4 pm.
(I have to set it outside on the porch because it just
smells too good to have in the house.) Meanwhile,
go shopping! :-)
Carolina Crock Pork
1 tablespoon olive oil
1 1/2 pounds pork loin roast
1/2 cup onion, chopped
1 clove garlic, pressed
1 teaspoon dry mustard
Salt and pepper to taste
1/4 cup tomato paste (I use ketchup)
1/4 cup Worcestershire sauce
2 tablespoons cider vinegar
In a skillet, heat the olive oil and
brown the pork roast on all sides.
Place in a crock pot with remaining
ingredients. Cook on high for 5 to7
hours or on low for 8 to 9 hours,
depending on the type of slow
cooker you have. When done, shred
with two forks and serve with crock
pot juices.
